Cuisine Claire offers cooking instruction in various formats, including:
  • hands-on, for individuals, couples and small groups (up to six participants)

 Some popular themes include:

  • The Fundamentals: a flexible series of classes to help you learn, practice and master basic and essential cooking skills. You will build a repertoire of classics as you learn techniques and basic recipes. This series also incorporates many of the lessons from Fresh Inspirations (see below), for as you master basic skills, techniques and recipes, you will learn to trust your instincts and grow in confidence to improvise and develop your own recipes.
  • Fresh Inspirations: Develop confidence as an improvisational cook. Prepare a variety of dishes based on seasonal, farm-fresh ingredients and an understanding of flavor combinations. You’ll learn versatile techniques, and work from formulas and guidelines rather than strict recipes. 
  • Little Plates Around the Globe: Travel to the Mediterranean,  the Middle East, Latin America and Asia via a savory selection of small plates comprising a worldly party menu.
  • Seasonal Soups: Build your soup repertoire. In cold weather, hot weather and everything in between, a bowl of soup can be the perfect meal or starter course.
  • Make-ahead Magic: It’s efficient and economical. “Batch cooking,” meal kits and other make-ahead practices help you optimize an afternoon’s food prep. Plus you’ll  go home with several meals to stock your fridge and freezer.
  • Kids Get Cooking!: Kitchen basics and great menus for kids, ‘tweens, teens who seriously want to learn to cook.
  • Those Cruciferous Vegetables: Broccoli, cauliflower, cabbage, kale, bok choy, turnips, et al. Seems we’re always being told to eat them, but people also say it’s not easy or appealing. In this class you’ll learn many ways to make these nutrient-packed veggies delicious.
